We've been researching wheat, whole wheat, and flours lately. It's one of those "in moderation it's fine" things. . . except it's in everything you eat! Just like high fructose corn syrup!
I am not interested in fad diets. I do not believe I need to give up all gluten because we do not have an actual allergy to it. However, I do believe in eating REAL food. I believe in organic food. I don't want to eat anything that has been processed or tampered with. Labels can be so tricky. So many people think because something is labeled ENRICHED that means it must be healthy since they are adding vitamins and minerals. It is actually the opposite. Enriched means that while it was being processed (heavily processed at that) nutrients were taken out and they are tampering with the product to attempt to add those nutrients back in. But you only end up with a heavily processed product that is not good for you.

And now, the result of my late night flour research. . . flourless, PALEO BROWNIES!! YUM!
I followed this recipe over at a cute blog called Easy Peasy. They were so easy to make. They are made in one pot! Stir it together and pour it into an 8x8 baking dish. DONE! My family loved them. My little girls had no idea they were different from any other brownie. And they are so rich! Perfect when you just need that chocolate :)
Below is the recipe and my little step by step for you. Enjoy!
Ingredients:
1 Cup pure maple syrup (the only ingredient should
be maple syrup!)
3/4 Cup natural cocoa powder
1 Cup almond butter
2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp salt
1 egg
1/4 Cup dark chocolate chips (I used semi-sweet
since that's what I had on hand)
My ingredients
Directions: Heat the syrup on low. I made sure it was a little warm then added the cocoa powder. Stir until smooth.

Pour it into a baking dish that was greased with olive or coconut oil. Bake for 40-50 minutes at 325F.
Check with a toothpick to make sure they are done. Cool and serve!
Next time I might try doubling the recipe and using a 9x13 pan.
